Cooking Dinner

Eggplant Pasta Primavera

1 T. Olive oil
2 garlic gloves
2 celery ribs
1 medium onion
1 small eggplant
1 c. grape tomatoes
1c. Tomatoe sauce
1c. Part-skim Mozzarella cheese
1/2 c. Parmesan Cheese
1 pkg. Penna or rigatoni pasta


Saute garlic, celery, onion and eggplant 8-10 minutes.  Add tomatoes and tomatoe sauce.
Pour over drained pasta, add cheese and serve.

1 cup serving 230 calories

  1. Looks like I didn't comment when I read this, but I actually bought eggplant yesterday with this dish in mind. My fellas like everything. Age has it's benefits.

    Re DH. He broke both the ulna and the radius (?) very close to the wrist. He will see the orthopedist on Tuesday morning. He's got a molded splint thing that he's wearing. His fingers ARE swollen. He's tried to keep it elevated and has a chill pack that he applies several times a day. How else can he keep the swelling down? His fingers look like little sausages. His doctor told him it was okay to referee soccer so he's doing two more games this afternoon. (sigh). It's his dominant hand and he's pretty helpless with fine motor stuff. We're closing on a house tomorrow and I know there will be a zillion places for his signature.
